cultivation
Our century-old Chetoui and Sahli olive groves, native Tunisian varieties, are grown organically on the family estate in Utique so that we always know where our olives come from. Our agronomists stay at the forefront of research, constantly improving our growing techniques and practices to suit the terroir. To preserve the biodiversity of our ecosystem, we are committed to a new, sustainable and eco-responsible agriculture that guarantees olives of excellent quality.
harvest
Our olives are picked by hand between early November and late January. This traditional, ancestral method protects the well-being of our trees without bruising the fruit, taking the greatest care of their branches. Remember that extra virgin olive oil is nothing more than olive juice, just like a fruit juice, so the freshness of the fruit is essential to a quality olive juice. Our harvest team is made up mainly of rural women, all from the region, for whom this seasonal farm work is their main source of income. We have committed to keeping a close bond with these women all year round: it is an economic responsibility and a social choice we make.
Oleastra embodies
a new generation
of producers
Quality, authenticity and respect are not just words, they are our standards. We know that combining “quality” and “quantity” is a delicate balance, which is why our production is limited: this way we can guarantee a premium quality that meets the criteria of the most demanding tasters and users: oleologists, experts and chefs. Each year we also set aside part of our harvest for our most loyal customers.
raya abid
Raya grew up in a family of entrepreneurs, so planning projects and seeing them come to life comes naturally to her. A graduate in Economics and International Relations from Boston University, she continued her studies in Paris, where she earned a Master’s in International Business Strategy and Engineering at ESSEC Business School.
As a mother, she wanted to pass on to her children a taste for healthy, authentic products, the flavours of the land and big family meals. She decided to take over and develop the family land in Utique, in northern Tunisia, turning it into hectares of organic farmland that combine modern technology with traditional ancestral methods.
A fourth-generation olive oil producer, Raya was recently certified as an olive oil sommelier by the New York International Culinary Center and the Olive Oil Times Education Lab. Now a farmer, Raya has made the most of the rich terroir of the Utique estate. She took over the management of a 30-hectare olive grove and created OLEASTRA, a premium extra virgin olive oil brand that has won several international awards.

Fruité vert intense
—
