Our century-old Chetoui and Sahli olive groves, native varieties of Tunisia, are organically cultivated on the family estate in Utique to ensure full traceability of our olives. Our agricultural engineers remain at the forefront of research, constantly striving to improve our farming techniques and practices in harmony with the land. To preserve the biodiversity of our ecosystem, we are committed to a new, sustainable, and eco-responsible approach to agriculture, ensuring the exceptional quality of our olives.

Harvesting

Our olives are handpicked between early November and late January. This traditional, ancestral method ensures the well-being of our trees by treating their fruits gently and taking the utmost care of their branches. It is worth remembering that extra virgin olive oil is nothing more than olive juice just like fruit juice, so the freshness of the fruit is essential to producing high-quality oil.
Our harvesting team is made up primarily of rural women from the local region, for whom seasonal agricultural work is their main source of income. We are committed to maintaining a close relationship with these women throughout the year—an economic responsibility and a conscious social choice.
